  • Ground black pepper ~ 1 pinch
  • Soy milk ~ 1 cup
  • Fresh asparagus ~ 1 pound
  • Vegetable broth ~ 11/4 cups
  • Grated Parmesan cheese ~ ¼ cup
  • Yogurt ~ ½ cup
  • Chopped onion ~ ¾ cup
  • 1 tsp. of lemon juice
  • 1 tsp. of salt
  • 1 tbsp. of butter
  • 2 tbsp. of all-purpose flour
Know-how:
  • Take a saucepan and place asparagus, onion, and vegetable broth (1/2 cup) in there. Then, boil until tender.
  • Leave a bit asparagus to decorate. Mix the whole remaining vegetable and puree until you recognize that they are smooth.
  • Melt butter and then sprinkle pepper, flour, and salt. Remember to stir for 2 minutes. Continue adding vegetable broth (1 ¼ cups) and start increasing heat. Just stop stirring when the mixture has boiled.
  • Don’t stop! According to order, add vegetable puree, milk, yogurt, and lemon juice into the mixture. After boiling all, pour into a bowl. Finally, use the left asparagus for garnish.

  • 1 diced stalk celery
  • Arborio rice ~ 1 cup
  • Dry white wine ~ ½ cup
  • 2 tbsp. of olive oil
  • Freshly grated Parmesan cheese ~ ¼ cup
  • 2 tbsp. of lemon juice
  • ½ tsp. lemon zest
  • ¼ tsp. of salt
  • ¼ tsp. of ground black pepper
Know-how:
  • Take a saucepan, add a little water, and place a steamer into there. Boil the water and add asparagus after covering the lid for 5 minutes. Cut asparagus into the small pieces ~ 1 inch and put them aside.
  • Continue heating chicken broth in your saucepan. Remember to keep medium heat because you still prepare risotto.
  • Use a skillet (having the best electric skillet will be more convenient) to heat olive oil. Add onion and celery to that skillet so as to cook and stir for 5 minutes.
  • Then, add the spice, including black pepper and salt. To make rice mixture in a complete, cannot lack salt, black pepper, garlic, and Arborio rice. Stir them for over 5 minutes. Continue adding white rice and stirring 5 more minutes.
  • Stir chicken broth into that mixture for 20 minutes. After adding asparagus and stirring, take them out of the heat. Mix parmesan cheese, lemon zest, and lemon juice together. Complete!
